Fix steep time before grind

Prepare three identical covered vessels with 75 g coffee and 1,000 g water each. Choose a coarse reference on the hand grinder, the next wider step and the next narrower step. Steep every vessel for fourteen hours at the same measured temperature, starting them far enough apart to filter with equal care.

Use the same water, stirring pattern, vessel geometry and headspace. A refrigerator batch and a room-temperature batch do not belong in one grinder test. Temperature changes extraction enough to overwhelm a one-click difference.

Filter the coarse ladder

Pass each sample through the same sieve and final paper, recording filtration start, first clear stream and completion. Weigh the recovered liquid. Do not squeeze retained grounds, because pressure moves fine material through the filter and changes both yield and texture.

Run reference, wider and narrower grinds in coded order if vessels allow. If one filter clogs from a fold or tear, repeat that sample rather than assigning the failure to grind. Keep an unfiltered spoonful only for aroma comparison, not for judging drink texture.

Compare at equal drinking strength

Dilute each filtered sample to the same beverage mass or measured strength before tasting. The wider grind may filter quickly yet taste woody or empty. The narrower position may add sweetness and length until fines produce a chalky texture or a drying cocoa-like finish.

Taste cold and again after the glass warms for five minutes. Dryness often becomes clearer at the warmer point. A concentrated sample that seems bold before dilution can lose definition once all three cups are placed on equal terms.

Correct filtration or dryness

Move one step narrower when equal-strength flavor is weak and filtration remains easy. Move wider when paper filtration slows dramatically or the diluted cup feels dusty and dry. If all samples lack extraction, keep the centre grind and compare twelve versus sixteen hours in a later, separate test.

Stop when one position repeats filtered yield and completion time while producing the preferred balance after equal dilution. Do not extend the grind ladder and steep-time ladder together; their interaction makes the result impossible to attribute.

Log concentrate and serving cup

Record grinder setting, coffee age, dose, water, vessel, steep start and end, temperature, filtration stages, recovered mass, dilution and flavor at two serving temperatures. Note dryness separately from strength so a heavy concentrate cannot mask a rough extraction.

Store the selected click with the fourteen-hour control. If the service recipe later moves to twelve or sixteen hours, retain the grind for the first comparison and change time alone before deciding whether another burr adjustment is needed.

Should cold brew always use the coarsest grinder setting?

No. Very coarse coffee can taste empty. Find the narrowest position that filters predictably and remains sweet rather than dry after equal dilution.

Can I change grind and steep time together?

Not during calibration. Hold fourteen hours while mapping grind, then use the selected setting for a separate twelve-versus-sixteen-hour test.
