Separate grind from pouring

Select the hand grinder setting that previously produced a reasonable V60 and place one click on either side of it. The trial recipe is 15 g coffee to 250 g water at 94°C: a 45 g bloom for forty seconds, then three calm pours ending near 2:00. Mark pour heights on a practice vessel if your kettle technique varies.

Rinse the same filter type and keep the dripper, server and water unchanged. Record the water level immediately before each pulse. That recovery level reveals whether the bed is draining consistently even when the final clock time looks acceptable.

Map open, centre and closed

Brew at the centre mark, open the grinder by one click for the second sample, then close it by one click from centre for the third. Return the adjustment ring to zero only when the grinder's instructions permit it; repeated hard contact can damage the burr edges.

Use the same circular path and avoid rescuing a slow cup with a higher pour. Note bloom drainage, the time each pulse exposes part of the bed and the final drip. A target around 2:45 to 3:30 is a comparison window for this recipe, not a pass mark for every coffee.

Interpret the V60 bed

The coarse sample may finish quickly yet taste bright and empty; the finer sample may become sweeter before it begins to dry. Look for a bed without a deep central crater and for walls that are not coated with an unusual band of fines. Bed appearance supports the cup result but cannot overrule it.

When two settings taste close, prefer the one whose pulse recovery remains stable. A cup that needs a special final pour to finish on time is fragile. The goal is a burr gap that tolerates normal technique, not a theatrical bed photograph.

Respond to a flow error

If the coffee is sharp and the bed drains before each planned pulse, close one click. If drawdown stretches while the cup turns rough, open one click and reduce swirling on the confirmation brew. If the clock is late but the coffee is clear and sweet, keep the setting and record the coffee's flow character.

Stop when the same setting repeats within a fifteen-second drawdown band and the cooled cups agree on balance. Do not continue finer merely to reach a generic time; the next step may add dryness without adding useful extraction.

Keep a V60 flow record

Log grinder and click, filter lot, coffee age, water temperature, bloom mass, end time for each pour, final drawdown, bed note and flavor at hot and warm temperatures. A simple row per brew makes a change in pouring visible instead of hiding it inside a taste adjective.

Save the centre and winning settings together. On the next bag, begin at the winner but rerun the centre if drawdown moves by more than thirty seconds. That protects the map from becoming a permanent rule for coffees with different density or roast development.
