Production data sets the map.
The green coffee sets the profile.

The atlas begins with high-volume producing countries in USDA and International Coffee Organization data, then documents five commercially or culturally relevant lot types from each origin. It covers both Arabica and Canephora, including washed, natural, honey, wet-hulled, monsooned and anaerobic preparations.

This is not a claim that one profile represents every farm or crop. Moisture, density, screen size, water activity, variety, processing and storage must be measured for each lot. Temperatures are deliberately not transferred between machines; the articles focus on decisions, events, risks and cup verification.
